Found this recipe on “The Mother Nature Network” today, and modified it for the paleo diet. ^_^


Cooking peaches on the grill intensifies the sweetness and enhances the juiciness of the fruit.
 
Grilled Peaches
Prep time: 5 minutes  
Total time: 10 minutes  
Yield: Serves 4
 
Ingredients
1 pound ripe peaches
Drizzle melted coconut oil
Cooking directions
Using a sharp knife, make a deep slice through center of peach. Remove peach pit by twisting each half in opposite directions. Scoop out pit. Brush flesh with oil. Place halves flesh side down on grill until tender but not falling apart.
Serve hot over vanilla Greek frozen yogurt. Can be topped with a light drizzle of honey, if desired.
